Risotto de Abobora e Laranja / Pumpkin and Orange Risotto




Ingredientes:
(2 pessoas)

  • 200 gr de Abobora cortada en cubos muito pequenos
  • 1 Cebola finamente picada
  • 160 gr de Arroz para Risotto
  • 1 Litro de Água ou caldo de Legumes
  • 60 ml de Sumo de Laranja
  • 2 colheres de sopa de Parmigiano Reggiano ralado
  • 1 colher de sopa de Azeite
  • Sal q.b.


Preparação:

Numa panela, alourar a cebola em temperatura baixa. Quando esta estiver translucida acrescentar a abóbora, o sal e deixar cozer durante cerca de 1 minuto em temperatura média/alta.  De seguida, acrescentar o arroz e deixar cozinhar um pouco mexendo sempre, quando este estiver brilhante, adicionar o sumo de laranja e deixar ferver um pouco.
Quando algum do sumo estiver evaporado começar a adicionar a água ou o caldo de legumes, que deverão ser previamente aquecidos. Começar por acrescentar uma concha de liquido e ir acrescentando à medida que for necessário até não haver mais água ou caldo de legumes que possa adicionar.
Quando o arroz estiver "al dente" e não muito seco acrescentar o queijo, mexer bem, e retirar do fogo. Deixar descansar durante 1 ou 2 minutos e servir.


ENGLISH VERSION

Ingredients:
(2 servings)

  • 200 gr of pumpkin diced in smal pieces (about 1 to 1 ½ cups)
  • 1 finely chopped Onion
  • 160 gr Risotto Rice ( ¾  cups)
  • 1 Liter of  hot water or vegetable broth
  • ¼ cup of Orange juice
  • 2 tablespoons of grated parmesan
  • 1 tablespoon of Olive Oil
  • Salt to taste


Process:

Lighten the finely chopped onion with the olive oil in a stewpan. Add the pumpkin, let it cook for 1 minute and add salt. Leave to simmer for a few minutes, stirring frequently.
Sprinkle in the rice and mix until the grains become transparent. Pour in the orange juice, leave it to evaporate over a high heat. Pour in a ladleful of water/vegetable broth and stir delicately with a wooden spoon, until the rice absorbs the liquid. Repeat until the rice is soft but firm.
Just before serving, add the the parmesan  and leave it a few minutes off the heat.  Serve and enjoy it. :)
